Since it's late, I'm just going to throw up the logo I've been working on. I usually like to get more than one version out so people can have some versions to compare and take into consideration, but the others I've started on so far are pretty bad. Not sure about the color yet, I'm just trying hard to stay away from green and some or all of the packaging will be brown paper (similar to grocery bags). The type version below has some 'grunge' type that isn't the in thing anymore, design-wise, but I think in this case it has the potential to work. I may also try a stenciled type, and then some cleaner type to see how that works.

I like your idea - have you checked out some of the local grocery chains that are putting out organic lines? I think the brown bag look has a lot of potential and home-grown appeal, and I would think wouldn't be too expensive since it's less processed. It would also possibly stand out in a sea of bleached white labels - particularly in the organic food category.
I'm a big fan of brown as a color choice also - but I've found that it can be difficult to find the one you want...you might try to print some samples of several colors to make sure there are no surprises for the final print out. This brown still has some green in it that could go the wrong way once you get ink to paper. Probably with the brown paper, you'll have to test many of your color choices to make sure they don't get too muddy on that background.
While the brown on brown palette is nice, you might want to think about using a good deal of white also - that is also a popular way to say "fresh, wholesome, organic, unprocessed" in the mass market.
Starting is the hardest part! I'll check back to see what you've done next.
I just love what you have! The logo is awesome and looks hand drawn and very organic. The image is also very cool because it seems like you are trying to show, rather than tell, how accessible your organic goods are.
The color palette is really working for me as well-love the brown and orange. I would most definetly be buying this coffee...
